Not going to lie, this tastes AWESOME
What you need:
Chicken - I used thighs as i find these more juicy
1.5tbsp soy sauce
4 tbsp honey
2 spring onions
Place the chicken in a Tupperware box or food bag and add the soy sauce, ground pepper and honey, add in the zest of one lime and squeeze the juice in to the mixture (use two limes for the juice)
Finely chop the spring onion and also add.
Now get your hands in there and make sure all the chicken is covered. I then sliced the remaining lime and added this to the box, place in the fridge to marinate.
I did mine the day before but try to give it at least 2 hours for the flavours to really get going.
Shallow fry the chicken, using coconut oil instead of olive oil etc. Add all juices left in the box/bag and leave to cook until the chicken is golden brown.
I served mine with a side salad and mixed grains!
